The Idea

Anders Aagaard

As the founder of Madklubben, Anders Aagaard looks forward to opening the largest restaurant he has opened with Madklubben. It's not just because of the size, but more so because it's situated in some of Copenhagen's most historic premises. The menu will also be influenced by the surroundings. Therefore, the kitchen will frequently draw from the brewery's production – both in the bread, which will be baked with yeast from the beer production, and as basic elements and flavoring in the dishes.

Brewer Chris

As a guest in the restaurant, there's a good chance you'll spot Brewer Chris. He often moves around, fine-tuning the three large copper kettles in the back of the restaurant. Despite their attractive appearance, they are certainly not just for show – they are, in fact, a part of the brewery's production. Chris received his beer education in his home country of England, where it all began with brewing English Style Beer. Now, he leads The Jacobsen Brew House, where a wide variety of beer types are developed in collaboration with Carlsberg's laboratory just across the street.
